Once again, work and life got in the way of my responsibilities and getting a home-cooked dinner on the table was one that suffered greatly the first two months of the year. During my week away from work last week, Daniel and I put together a month of crockpot meals, finished the grocery shopping (all with coupons and sales!), and are now back in the swing of being responsible eaters. After dinner each night, I set aside the next night's recipe and ingredients so that it is quick and easy to throw it all in the crock pot before work the next morning. Some recipes have even been able to put together in the crockpot and store int he fridge overnight, making the next morning even easier. This new plan/schedule is making dinner manageable, so I expect it to last for quite some time. So, you should be expecting lots of crockpot recipes in Tuesday Treats.
Today's recipe is some delicious soup that Daniel made yesterday. It was absolutely delicious and we will definitely keep this recipe on our meal plan each month.
Ingredients
3-4 chicken breasts
1 lg. onion, finely chopped
2 med. carrots, finely chopped
1 med. russet potato, peeled and diced
1/4 c. chopped parsley
1/4 c. tomato sauce
2 cans chicken broth (14 1/2 oz. each)
1 can cream style corn
2 med. zucchini, cut lengthwise into quarters, then thinly sliced
salt and pepper to taste
Directions
Rinse chicken, pat dry and set aside. In a 4-quart or larger Crockery Pot, combine onion, carrots, potato and 3 tablespoons parsley. Add chicken, then pour in tomato sauce and broth. Cover and cook on low 7 - 8 hours or until chicken and potato are tender when pierced. At this point, you are supposed to remove the chicken breasts from soup, cool and cut into pieces. However, when Daniel made this, the chicken breasts were so tender that they easily shredded while still in soup. Stir corn into broth mixture, turn heat to high. Cover and cook 15 minutes more. Add chicken and zucchini to soup, cover and cook until zucchini is just tender, (15 minutes ±). Season to taste and sprinkle with 1 tablespoon parsley. (Daniel also added some cilantro.)

I really want to try this one too! I don't have many crock pot recipes, but need to use mine more. So easy to do in the morning and dinner is ready in the evening without much fuss. Thanks for posting!
