
I got this recipe from my cousin, Casey, more than eight years ago and have made it for dinner more than anything else I've cooked since I got married. It's a great dinner in the crock pot, or to take to someone's house or to warm you up when it's cold, or to fill you up when you're eating healthy or to freeze in batches and have on hand to thaw out whenever you don't want to cook. Or should I just say, it's a great recipe.
Ingredients
3 cans ranch style beans
1 can Ro-tel
2 cans diced green chiles
1 can corn
1 packet ranch dressing mixture
1 lb. ground beef
1 packet taco seasoning
Directions
1. Brown beef and season with taco seasoning, simmer for a few minutes
2. Combine remaining ingredients (don't drain cans before adding to soup) in crock pot or stock pot, add beef to mixture.
That's all. See? I told you it was a great recipe. Not only is it delicious, but it's easy and cheap.

Still a staple at our house.
I've also discovered a variation to it. Add Velveeta cheese while it's cooking. Thickens it up a bit and it's Great over Fritos or Tostitos and lettuce for a taco salad. Just makes it a little less healthy. But great for a crowd!
