I've perused Bakerella's site quite a few times and have been in awe of her cupcake pops. Apparently I'm not the only one because she's even been on the Martha Stewart show to dispense her cupcake pop recipe. Well, I got sucked in and had the idea that even I could make these cake pops. 



Abigail had a girl meeting (i.e. playdate) with a neighbor friend Monday night. They'd been planning it for quite a few days, and she wanted me to make treats and assure her that she would have refreshments to serve at her girl meeting. Somehow, I lost my mind in that request and thought it would be fun to make the cake pops for the girls. What was I thinking? Well, I shouldn't make it out to be so bad. It really wasn't. It's just that the girls wouldn't have cared if I'd thrown out a bag of animal crackers so I was crazy to go to this effort. Oh, well.
(I won't give out the recipe or even pretend to relay the instructions to you this time. If you are interested in making them, she has very in-depth instructions here.) I baked the cake on Sunday and finally got a chance to crumble it on Monday afternoon. Then, I made my mistake and made the cream cheese icing myself. I really think this was where the adventure went wrong based on comments and tips I read later on the site. If I ever crazily decide to do this again, I'll use the can of cream cheese frosting to make sure my proportions are right. Instead, I think I made too much icing that, when mixed together with the cake crumbs, made the cake balls too heavy and moist. When I got to the shaping portion of the procedure, it just wasn't happening. And, they were certainly too heavy to be held by the sucker sticks.
I wasn't too bummed out because it made the baking take much less time. I left them as cake balls and began dipping them into the melted chocolate and adding sugar crystals and sprinkles. So, instead of cake pops, I ended up with bright, colorful cake bites.
They were very rich and not at all what I expected them to taste like, but still yummy. The kids gobbled up quite a bit of them, and I was able to send a bunch home with our neighbors. We certainly don't need diet demon cupcake balls around here to tempt us.
Fortunately, the kids didn't leave much to tempt us...

That sounds so "not good." I'm a cake with no frosting person though!!! They do look like fun to make...although a pain!!! Thanks for making the effort.....now I know better than to get the bright idea! =)
